This is one of our "GO TO" recipes! I make these a ton for my kids and they love them! Plus I love the cleaner ingredients and nutrition they get along with something that tastes good.
Recipe ~
Ingredients:
1 cup mashed banana (about 2 large or 3 small bananas)
1/2 cup almond butter
1 egg or flax egg
1/2 tsp vanilla
1.5 cups almond flour
1 tsp baking soda
Dash of salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup chocolate chips
Instructions:
- Preheat oven to 350F and line a muffin tin with liners
- In a large bowl or electric mixer, mix together mashed banana, almond butter, eggs, and vanilla.
- In a small bowl, stir together almond flour, baking soda, and spices.
- Add dry ingredients to wet ingredients and stir till combined.
- Fold in chocolate chips.
- Fill muffin tins till about 3/4 full and add additional chocolate chips on top
- Bake for 18-22 minutes or until toothpick comes out clean when inserted.
- Let cool on wire rack after ten minutes
